Tabbouleh

For a celebration dinner of my return home, Mom made Marinaded Salmon (my favorite) and we had fresh corn and this lovely salad I concocted.

Now… I should preface this a bit because the drive to the Lakehouse, although only about 30 mins, was quite extreme… It started off when I merged onto the first highway and saw a bumper sticker reading “Don’t Hope for change, Vote for Change. Trump 2013”

Ok… I admit I not the most knowledgeable in political happenings and statistics, but I was like… DID I MISS SOMETHING? I mean I heard the rumors, but I thought that was to get more views for The Apprentice.. At any rate, this sparked a series of discussions between my family and I, which we do not typically embark in.

Needless to say, it did turn into a bit of a spicy night, me voicing my opinions and also being put in my place 😉   (much needed at times I do admit)

The rest of my drive was a bit high strung… sometimes when you want to be at a place, you just WANT to be there already! which equals… pedal to the metal!

Fortunately/Unfortunately I had a gopher in front of me…  For those of you that don’t know that term (could be a Rochester thing, idk where I picked it up) it means to have someone leading the way in front of you at a high speed, essentially enabling you to speed, while they’ll take the ticket if it comes down to it. I was ALSO doing this while listening to “Derezzed Remix to Tron” surfing around the highway like I was in Matrix Reloaded… flying around over 90mph (SHH DON’T TELL ON ME) I mean, I didn’t REALIZE I was going that fast! and trust me, after commuting 85 miles twice a week, receiving 3 tickets in the past year, I HAVE learned my lesson… NO I don’t think I’m indestructible because I’m a young woman, trust me, I haven’t gotten out of MANY-a-tickets.

Of course I did not learn my lesson when listening to this song again while driving home from work on the inner loop flying 30 over the speed limit again earlier this week…

In conclusion… I will NOT listen to that song while driving and I invented this flavorful-punch in your FACE side dish 😉

FINALLY here it is!

Ingredients:

  • 2- 1/2 cups Bulgar
  • 4 Roma Tomatoes, seeded and chopped
  • 2 Cucumbers, seeded and chopped
  • 1 Bunch (6-8) Green Onions, white and some green ends only, chopped
  • 3 garlic cloves, minced
  • ~1/2 cup basil, chopped
  • Small handful of fresh Mint Leaves, chopped
  • Juice from 3 lemons
  • 1/2 to 2/3 cup olive oil
  • salt-n-pep to taste
  • Feta cheese – optional
Directions:
  1. Soak Bulgar in boiling water 30mins-1hr. Drain and set aside.
  2. Chop up tomatoes, cucumbers and onions and toss in a large serving bowl.
  3. Stir in garlic, Bulgar, lemon juice and olive oil.
  4. Add basil and mint leaves, I use kitchen shears to cut them up (MUCH EASIER!)
  5. Toss around and add salt, pepper and more olive oil to taste, now add the cheese if desired.
  6. Serve chilled.
  7. Bon Appétit!
