Lemon Bars



  • 1-1/2 cups butter, softened
  • 3 cups all-purpose flour
  • 2/3 cups granulated sugar


  • 8 Eggs
  • 10 TBSP all-purpose flour
  • 4 cups granulated sugar
  • 1-1/2 cup fresh lemon juice
  • powdered sugar


  1. Preheat oven to 350 F
  2. Bars: Mix butter, flour, and sugar until combined. Press mix into bottom of a 13×9 inch ungreased pan. Bake 20 min, or until just turning brown
  3. Topping: Lightly whisk eggs. In a separate bowl, mix flour and sugar together. With a wooden spoon, gently stir flour mixture into the eggs.
  4. When you are ready to pour the topping onto the shortbread base, add lemon juice, stir, and pour mixture immediately over shortbread.
  5. Bake for 20 min more, or until topping is firm to touch. Cool, add powdered sugar on top, then cut!
