Heath Drop Cookies

This picture doesn’t do justice to how amazing and addictive these cookies are! My best friend Simah’s Mom made these for me at college, and trust me… you CAN’T stop eating these things!! Fortunately one batch makes about 5-6 dozen… so grab a gallon of milk and go to town!

I like to bake them at 8-9 mins and when you pull them out you won’t think they’re done, but about 30 seconds of sit time and they’re PERFECT, soft and chewy! Or put them in for 11-12 and they’ll be firmer. You decide, there’s plenty to play with!


  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed light)
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 3 eggs
  • 3-1/2 cup all-purpose flour
  • 2 tsp baking soda
  • 2 tsp cream of tartar
  • 1-1/3 cups (8oz package) Heath Bits o Brickle Toffee Bits


  1. Heat oven to 350F. Lightly greasy cookie sheet.
  2. Beat butt, sugars, vanilla and salt in large bowl until blended. Add eggs, beat well.
  3. Stir together flour, baking soda and cream of tartar, gradually add to butter mixture, beating until blended. Stir in toffee bits.
  4. Drop by heaping teaspoons onto prepared cookie sheet. Bake 8-10 mins or until lightly browned.
  5. Cool slightly, remove to wire rack.
