Italian Salad Stuffed Shells


Italian Salad Stuffed Shells:


  • 1 (16oz) package jumbo pasta shells
  • 4 cups chopped romaine lettuce
  • 1/2 cup chopped fresh basil
  • 1-1/2 cups chopped cooked chicken
  • 1 cup chopped tomato
  • 3/4 cup chopped cucumber
  • ~1/3 roasted red pepper garlic vinaigrette dressing


  1. Cook pasta shells as directed on the package. Drain and cool.
  2. Place all chopped ingredients except vinaigrette in a med. bowl and toss. Add salt-n-pep as necessary.
  3. Pour vinaigrette over the salad, toss to coat.
  4. Stuff the shells.
  5. Cover and refrigerate 2 hours before serving!
