Egg and Pasta Scramble


I found this quick-n-easy recipe from Heather of girlichef. Looked different and delicious! and it sure was!! I tweaked the portions a little because I wanted to use a whole box of pasta, and I used Italian Seasoning in place of the thyme and oregano.

This dish was fun and tasted great served cold or hot! It has a nice scallion/green onion flavoring to it, and I added tons of crushed red pepper to give it some heat!

  • 1box dried pasta cooked al dente
  • 6 eggs
  • freshly grated Parmesan cheese
  • Olive Oil
  • 2 scallions, sliced
  • Sea Salt
  • Italian Seasoning
  • Crushed Red pepper
  • Freshly Grated Black Pepper


  1. Bring a pot of salted water to a boil, add pasta and cook as directed for al dente.
  2. Meanwhile, in a bowl mix eggs and parmesan. Set aside.
  3. In a skillet, coat bottom with Olive oil and add scallions and crushed red pepper, cook until softened, just a few mins. Then pour in pasta and mix thru.
  4. Add Egg and cheese mixture, salt-n-pep and Italian Seasonings, Constantly stir and scramble the mixture until eggs are cooked.
  5. Enjoy!
