Penne with Sun-dried Tomatoes and Goat Cheese


This is a tweaked a Giada recipe, which is just PACKED with flavor and very gourmet! It pairs great with Cabernet or Malbec wines.

Original recipe was with Angel hair and Parsley if you end up googling it, but this one is WAY better! 🙂


  • 1 (10 oz) jar sun-dried tomatoes packed in oil, chopped (oil reserved)
  • 1 small onion, chopped
  • 4 garlic cloves, minced
  • 1/4 cup tomato paste
  • 2/3 cup dry white wine
  • 8 oz angel hair or penne
  • 2 oz soft fresh goat cheese, coarsely crumbled
  • 2 TBsp chopped fresh basil leaves


  1. Heat 2 TBsp of the oil from the sun-dried tomatoes in a heavy large skillet over med heat.
  2. Add onion and saute till tender, approx 3 mins.
  3. Stir in garlic and saute 1 min.
  4. Add tomato paste and cook 2 mins, stirring constantly. Then add wine and sun-dried tomatoes and simmer until liquid reduces by half, approx 2 mins.
  5. Meanwhile, bring a large pot of salted water to a boil. Add pasta and cook al dente.
  6. Drain pasta and reserve 1/2 cup of pasta  water.
  7. Add drained pasta to tomato mixture and toss to coat, add some reserved pasta water to moisten.
  8. Season pasta to taste with salt-n-pep.
  9. Sprinkle with Goat cheese and shredded parm.
  10. Bon Appetite!
