Marble Brownies! “Cheesecake Brownies”


I was in the mood to make some sort of comfort food, so I decided to whip up these bad boys…

These brownies are to DIE for! I actually tried following a recipe from a really old cookbook, but those were a disaster… literally.. It called for 1 brownie mix box, but you really need 1.75 so be prepared to have some extra mix at the end.  Anyways, that’s the first and LAST time I follow a recipe word-for-word. So I stuck to my gut and tweaked the heck out of it (what ELSE is new) and they turned out delicious!

They’re pretty rich & moist, a lot thicker than the average brownie, and this batch makes a lot. I ended up bringing them  into work and they were polished off in less than 10 minutes!


  • 2 Packages Brownie mix with Chocolate chunks
  • 8 oz cream cheese
  • 5 TBsp Butter
  • 1/3 cup sugar
  • 2 eggs (plus eggs for both brownie mixes)
  • 2 TBsp Flour
  • 1 tsp Vanilla
  • 13×9 baking pan


  1. Prepare both Brownie mixes as directed.
  2. In a separate bowl, combine softened cream cheese, melted butter, sugar, 2 eggs, flour and vanilla. Beat until smooth and fluffed.
  3. Spoon ~1/2 (1 box) brownie mix into pan. Layer with all the cream cheese mix, add half of the brownie mix that’s left (~1/2 box) Eyeball this part. You might need more brownie on the bottom or top depending on how thick you want these babies!
  4. Swirl with a knife
  5. Bake as directed for the brownie mix, then check them. Sometimes you have to add another 5-10 mins depending on thickness and your oven.
  6. Voila! 🙂


Also on the Menu this weekend was my Penne with Shrimp & Asparagus in a Red Pepper Cream Sauce. I Love this recipe because it’s REALLY different. It’s both spicy and creamy and has a lot of different textures with all the veggies and shrimp in there. Use any pasta you want, I was between campanelle and the Farfelle, but I feel like these get more sauce tucked in the corners of the bow-tie.

I made this an extra big batch using a whole bag of Shrimp and extra spiciness! yummy

    Yummm. I love marbled brownies, they’re so much better than boring old regular brownies. The pasta looks pretty darn tasty too 🙂
