Gnocchi Bake with Spinach in Spicy Red Cream Sauce


I know I know, the picture doesn’t look that great, but I ASSURE you this dish is absolutely unbelievable!! It was sooo good I was too hungry and impatient to try and take a good picture, all I wanted to do was eat! Haha

I came up with this one on a whim, it’s super snappy but you can tone down the cayenne if you want. This one is made with Large Pasta shells, but I would strongly suggest using good Gnocchi. If you’re in Rochester, Olindo’s is the best place to buy them authentic and homemade.

It makes a ton so if you’re going to cut the recipe in half, don’t cut the sauce in half because you’ll want the extra (yummmmy) and I ended up wanting more shredded mozz on it, so buy some extra if you’re a cheese freak like me 🙂 Seriously though, who doesn’t love cheese?


  • 1 LB Gnocchi (or pasta shells/ziti/penne)
  • 2 Yellow onions, peeled and fine dice
  • 4 garlic cloves, minced
  • 16oz crushed tomatoes
  • 6 TBsp tomato paste
  • 2 tsp crushed red pepper
  • 1 tsp dried parsley flakes
  • 1 TBsp cayenne (or more to taste)
  • 1 cup heavy cream
  • +4 cups mozzarella, shredded
  • 6-8 large basil leaves, fine chop
  • 4 oz chopped spinach
  • 1 cup breadcrumbs


  1. Heat oil in skillet on med, throw in onions and cook till translucent. Approx 8 mins.
  2. Throw in Garlic and cook 2 mins
  3. Add tomato paste, crushed red pepper, parsley and cayenne. Stir for a min to let it heat up.
  4. Then add crushed tomatoes and cream. Let it heat together, stirring occasionally till it gets hot.
  5. Combine 4 cups mozz and 1 cup breadcrumbs in a separate bowl.
  6. Cook Gnocchi as directed, strain and toss with spinach, chopped basil and half the mozz-breadcrumb mixture. Expect it to be slightly dry. Throw this all in a casserole dish.
  7. Pour sauce all over the Gnocchi blend and toss a little bit to coat. Them put remaining half of mozz-breadcrumb mix on top.
  8. Bake at 350, covered with tin foil, for 30 mins, then remove and bake ~10 mins or till top is golden brown
